It's April. I have harvest food for us to eat. Actual food. From our garden. Amazing.
This is bonus food because it's the result of my laziness. You see, last Fall, when I
tidied ripped up the spent garden, I neglected to tear out all of the spinach. So I left it. For no other reason than because I wanted to go inside. That the spinach survived our freakishly mild cold winter is completely the spinach's responsibility-it was just dumb luck on my part. I did nothing to protect it, baby it, cover it, nada.
Here it is earlier this year (February 17, to be exact):
And here's my glorious TWO ounces of spinach. Washed and waiting to be served with dinner.
I'm thinking spinach meatballs--my kids will eat 'em and it's the only way to stretch 2oz of spinach into 5 servings.

ReplyDeleteYes- I always call that my "overwintered" spinach. ;-) But it does always get us the first harvest of the year, just like you! Fun.
