Batch Cooking.

2+ years into this food allergy thing with Bryce and I still hate cooking.

Is "hate" too strong a word? Maybe. I guess I no longer "hate" cooking, I tolerate it more. I'm getting better at it and have been trying to do batch cooking more frequently. Brad recently scored 25lbs (or more, who knows) of potatoes for $2. That's a lot of potatoes and beyond "potato bar" and baked potatoes, I needed to figure out what else I could do with them.

I decided on freezing some mashed potatoes, so I peeled, cubed, salted and boiled about 10lbs worth. I also roasted some garlic to turn these spuds into "roasted garlic mashed potatoes". I have to say, they came out great! They are simply cooked, hand-mashed potatoes with added roasted garlic. I kept them dairy-free for Bryce. When I thaw them, I can add some of Bryce's safe "butter" to his and add cream cheese and milk to ours.

The 10lbs was enough to feed us for dinner that night plus I froze two more meals worth. All I did was scoop them out in 1/2 cup portions onto a cookie sheet, flash froze them, and then put the frozen scoops into a freezer bag. Check it out:

  1. Ha!!!! The "prize" to the first person who commented on my bucket o'margaritas goes to my cousin Jennifer, who mentioned it in an email. I call the bucket "Mother's Little Helper" ha ha.
